The inside of our home looks like we are camping these days – with all of the outdoor yard work and springtime activities, the indoors gets a little neglected!
When a friend comes to the door, the first impulse is to make excuses for the state of the house. Then I stop and realize that this is your buddy who has known you for 25 years! You have seen each other and each others homes in the best of shape and in the worst of shape! And all that matters is that she is here for a visit, a chat…..and an open faced avocado sauerkraut sandwich.
How about a slice of fresh spelt bread, toasted, add a thick layer of mashed avocado and a tangle of sauerkraut on the top. That is the recipe!
Crunchy, creamy, tangy and tart…Yumm!!!
And so good for you too!
Just like a chat with a wonderful friend!
“She is a friend of my mind. She gather me, man. The pieces I am, she gather them and give them back to me in all the right order.”
~ Toni Morrison, Beloved

That sounds delicious Edie! And so easy with no mess…because we sure don’t need more mess do we!
Will try it this weekend.

Edie,
Wow, a refreshing change from my regular summer sandwich; tomato and cheese!
